spicy chicken and veggie tacos


nothing too special here for this dish. today was one of THOSE days. hot, allergies, hives...all for the mom this time...so a tired and cranky momma bred a tired and cranky boy today. since its finally freakishly hot here we decided after one nice long nap to high tail it to the nearest greasy mall and ride the carousel 172,838,3939 times. after the heat died down i figured it was a good time to get something started. this is such an easy weekday dish to throw together a bit before and then easy as pie later. not a lot of measurements going on so adjust to your tastes.

enjoy!

a bunch of boneless, skinless chicken breasts
cumin
cayenne, pinch or more
sea salt
pepper
onion powder
2 garlic cloves, minced
cilantro, handful and chopped
parsely, handful and chopped
olive oil

mix everything together and marinate as long as you need.

a couple scrubbed zucchini, thick julienned
1 small yellow onion, sliced thinly
1 yellow bell pepper, sliced thin
mushrooms, as you like them
3 garlic cloves, sliced thinly
sea salt and pepper
cumin
chili powder
cilantro, handful and chopped
parsely, handful and chopped
olive oil

mix together and marinate.

handmade whole wheat tortillas from trader joes, yummy!
1 or 2 avocados, sliced
fresh grated organic cheese
black beans
fresh corn kernels

when ready heat up the grill pan and slice the chicken up; saute the chicken. when done toss in the veggies and mix up and cook until juicy and done. toss in some of that corn.

warm up a tortilla, spoon in some chicken and veggie mixture. top with avocado, beans and cheese and eat!

green olive turkey burgers stuffed with goat cheese *update below*


green olive burges filled with creamy oozing goat cheese...does anything get better? littlefoodie doesn't think so...just look at that face!














over here at the littlefoodie household we've recently come into a whole stampede of Silver Goat brand goat cheese...logs and pyramids and crumbles. its also no secret around here for the love we hold with our goat cheese.

the salty goodness of manzanilla green olives and goat cheese seems like a pretty good pair. fill it all up and into a juicy grilled burger and you have heaven!



enjoy!

1.5 lbs ground turkey (or beef should ou prefer)
1 small yellow onion, diced small
3 ginormous garlic cloves, minced
handful of chopped parsely
1 cup of green olives, chopped small and roughly
black pepper and a pinch of sea salt
panko breadcrumbs for binding
a log or 2 of goat cheese

combine meat, onions, garlic, parsely, olives, s&p and panko. mix with your hands and add some more panko if needed. also, if it needs a little eaxtr binding and moisture add an egg.

grab a palmful of meat and make a little well in the palm of your hand. add as much goat cheese as you'd like to the center. scoop up some more meat and add it to form a burger; covering the goat cheese. repeat.

at this point i'll throw them in a pan and cover them up and pop in the fridge until dinner time. throw them on the grill still a little frozen. turkey meat is lean and can fall apart pretty easily and this way, frozen, they'll hold together a bit more.

when its chow time throw them on the grill a few minutes on each side. or in a broiler for about 12 minutes or so.

we'll be enjoying them with some steamed broccoli and shoe string potatoes. updated, cooked and juicy pics later!

happy 3rd littlefoodie!!!!!

we recently celebrated littlefoodies 3rd b-day! bittersweet all around, for my one and only baby is a real boy.

we created some where the wild things are by maurice sendak invites. it was a blast...with tons of food and sweets and complete with littlefoodies newest love, a little mermaid pinata! the night before the party littlefoodie and i worked on our max cake...well, i worked and he licked the bowl AND double fisted the coconut..AWESOME!

thanks to all family and friends who care the mostest for makng it very special! and a special thanks to the cold beer for making everyone come! we'll see ya all next year.
